PHYSICOCHEMICAL CHARACTERISTICS AND SOME BIOACTIVE ATTRIBUTES OF KASTAMONU CHESTNUT HONEY

Özet
Chestnut honey, which has distinctive features in a certain geography, is one of the main groups of monofloral honey types. It is known for apitherapy properties besides the nutritional attributes. In the Black Sea region, Kastamonu is the most important province in the population of chestnut forests. The highest chestnut production is in Kastamonu, especially İnebolu forests provide 50% of the chestnut production of Turkey. Moreover, Kastamonu province constitutes two-thirds of the chestnut forest flora of the Black Sea region. In this study, in order to contribute scientifically to the recognition of chestnut honey, which is extensively produced in Kastamonu, 15 chestnut honey samples were collected from Abana, Bozkurt, Doğanyurt, Cide, Küre, and İnebolu districts, and some biochemical and quality properties were examined. According to the location of the analyzed honey samples, indices values, moisture%, and dry matter% values are very close to each other, it was found that indices values ranged between 1.4845 and 1.4991, moisture values between 16.48% and 20.80%, and dry matter values between 79.20% and 83.52%. The differences between the color intensity values of the samples were found to be statistically significant (p< 0.05). The color intensity of the samples were between 107.25 mAU (the lowest value in Bozkurt2) and 336.00 mAU (the highest in Doğanyurt1). The highest antioxidant activity (inhibition%) belonged to Doğanyyurt1 sample (63, 05%) between the chestnut honey samples.
