Barley (Hordeum vulgare L.), is one of the staple cereal for most of the population of the world. It is generally used in animal feed, malt and beer production. Barley is also used in high fiber biscuits, multigrain flours and bakery products, ready to eat breakfast cereals, etc. Consumption of barley has increased during the recent years because of exploring nutritive properties. It has antioxidant activity and high content of soluble fibre β-glucan. The β-glucan in barley flour using in bread can modified the glycemic index.
