Özet
Oils are one of the basic food components. They are not only a source of high energy, depending on the features they contain fatty acids in human nutrition and health has very important rules. In this review, the chemical structure of fatty acids, presence in foods, omega fatty acids, trans fatty acids and conjugated linoleic acid are given information about some of the summary.
