Özet
This study aims preparation and characterization of chitosan with high and low deacetylation degrees from deep-water rose shrimp (Parapenaeus longirostris), blue crab (Callinectes sapidus), pavurya crab (Eriphia verrucosa) and crayfish (Astacus leptodactylus) shells and edible film preparation and characterization from these chitosan. In order to determine physicochemical properties of the high deacetylated (% 92, 06-96, 17%) and low deacetylated (72, 19-76, 98%) chitosans; yield, moisture and ash contents, degree of deacetylation, molecular weight, apparent viscosity, water and fat binding capacities, colour, Fourier-Transform Infrared Spectroscopy, Scanning Electron Microscopy and X-Ray Diffraction analyses were applied. Then, thickness, density, water vapour and gas permeability and scanning electron microscopy of edible films from high deacetylated chitosan were analysed. The general evaluation, its show that there is a high possibility to conversion of shellfish wastes to edible film in our country and added value of waste can be evaluated in terms of producing a high value product.
