| Migration is a human movement that causes people to interact their habits, behaviors and cultural experiences according to the conditions and culture of their destination (Deniz & Öksöz, 2017). Thanks to its geographical location and historical past, Türkiye has been a region where different cultures and peoples have lived together. The migrations experienced in the Republican period have changed the demographic structure and cultural richness of the country to a great extent. In particular, communities from the Balkans, the Caucasus, the Middle East and Central Asia have made significant contributions to Türkiye's culture and cuisine. These migrations have not only resulted in displacement, but also in the merging of different cuisines, traditions and lifestyles. As immigrants have tried to establish their own cuisines in their new settlements, they have fused with local flavors, making Turkish cuisine richer and more diverse. The traditional recipes, cooking techniques and use of ingredients of immigrant communities have played an important role in the evolution of Turkish cuisine. In this study, the gastronomic heritage of the communities that immigrated to Türkiye and their impact on Turkish cuisine will be examined. The culinary cultures of immigrants carry not only flavors but also traces of their identities and the geography they live in. Understanding Türkiye's multi-layered culinary structure depends on the correct evaluation of these contributions. |
